Solar System Carrot Muffins

These delicious muffins are just the thing to serve your little astronauts and astronomers before they head back to their earth homes. They are super fast and easy to make. Imagine the delight of your guests waking up to the tempting aroma of cinnamon and nutmeg. I don't know about you - but my mouth is watering. To make one dozen, you will need:




2 cups self-rising flour
1/3 cup sugar
1/2 cup raisins
1/2 cup shredded carrot
3/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1 cup milk
1/4 cup vegetable oil
1 large egg



Step One: Preheat oven to 400 degrees F.



Step Two: Prepare the batter:
  • Stir together flour and sugar in a medium bowl. Stir in raisins, shredded carrot, ground cinnamon and nutmeg. Make a well in center of the mixture using a wooden spoon.

  • Whisk milk, oil and egg in a small bowl until smooth. Pour milk mixture into well and stir until just moistened.

  • Spoon batter into lightly greased muffin pans, filling three-fourths full.
Step Three: Bake at 400 degrees F for 18 minutes or until golden. Remove muffin pans from the oven using oven mitts. Invert muffins onto a wire rack. Serve warm.


Makes one dozen muffins.
