Football Foldovers

Your football/soccer fans will love these pizza-flavored meat pies. They are similar to empanadas, meat-filled pastries popular in Latin America.

6 ounces bulk pork sausage
1/4 cup of pizza sauce out of 15 ounce jar (keep remaining sauce for dipping)
2 single pie crusts or one box of refrigerated pie crusts, softened as directed on box
1 egg, beaten

Step One: Heat oven to 425 degrees F. In 8-inch skillet, cook sausage over medium-high heat 6 to 8 minutes, stirring occasionally, until pork is no longer pink; drain well. Stir in pizza sauce.

Step Two: On work surface, roll one crust into 13-inch round. With 3-inch round cutter, cut 11 rounds. Repeat with second crust.

Step Three: Spoon about 1 teaspoon sausage mixture onto each round. Fold each in half; seal edges with fork. Cut small slit in top of each with sharp knife. Place on ungreased large cookie sheet. Brush each foldover with beaten egg.

Step Four: Bake 9 to 11 minutes or until golden brown. Meanwhile, in 1-quart saucepan, heat remaining pizza sauce until hot. Serve warm appetizers with warm pizza sauce for dipping.
