Polka Dot Popcorn Cake

Get ready to sweeten up your next party with this delicious polka dot popcorn cake. It is a twist on the traditional crispy treats and a nice alternative, if your birthday boy or girl does not care for birthday cake. The polka dots come from candy-coated milk chocolate pieces. Use the standard array of colors or select a unique color combination to complement your party color scheme from the bulk M&M machine installed in many grocery stores.

1/2 cup un-popped plain popcorn
dash of salt
4 cups miniature marshmallows
1/2 cup margarine
1 cup candy-coated milk chocolate pieces

Step One: Pop the popcorn according to the package directions. Add salt to the popped corn.

Step Two: In a medium pot, melt the marshmallows and margarine over low heat, stirring constantly, until smooth.

Step Three: Combine the candy-coated milk chocolate candies with the popcorn.

Step Four: Remove the marshmallow mixture from the heat, and pour over the popcorn and candies. Mix gently.

Step Five: Spoon the mixture into a 13x9x2-inch non-stick pan coated with non-stick cooking spray. Use spatula to smooth out top of cake.

Step Six: Refrigerate the mixture until it hardens, so it will be easier to cut. You can cut this treat into squares, just like a piece of cake.

12 - 16 servings
