Polka Dot Cupcakes

These simple cupcakes sport polka dots and include a secret ingredient hidden in the batter. The secret ingredient is gelatin. You can choose the flavor of your cupcakes by selecting from orange, lemon, lime, strawberry, raspberry, watermelon or seasonal favorite gelatin products.

Step One: Make your cake batter according to package directions. Add one four-ounce box of gelatin with the water. Divide the batter evenly among regular-sized paper muffin cups in a standard muffin tin.

Step Two: Bake according to package directions or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool completely, about 30 minutes.

Step Three: Meanwhile, make frosting. Tint with paste food colors to coordinate with your party color scheme.

Step Four: Frost cupcakes. Place 7 white baking chips, flat side up, into frosting on each cupcake to look like polka dots.
